Our top 3 Summer Cocktails

The summer time is upon us and what better way is there to soak up the rays than with a delicious cocktail in hand. Whilst some cocktails do require the expertise of a fun flaring mixologist there are others that can easily be made in the comfort of your own kitchen or garden terrace.

The Aperol Spritz cocktail

Originally created in 1919 and an extremely popular drink in Italy over many generations, it is the perfect drink to enjoy in the sunshine.  To make it at home you just have to follow the very simple 3-2-1…

The method and measurements:

  • Fill your glass almost to the brim with cubed ice
  • Add 3 parts Prosecco
  • Then 2 shots Aperol
  • Finish with 1 shot/splash of soda and a generous slice of orange

The Hugo cocktail

Transport yourself to a summery evening with this refreshing cocktail of prosecco, gin and elderflower cordial

The method:

  • Pour a generous measure of gin into a glass half-filled with ice
  • add a good splash of elderflower cordial
  • Tuck in several mint leaves and cucumber ribbons
  • squeeze over a lime wedge and drop it in
  • To finish top up with prosecco, and a teeny tiny splash of soda water

 

The measurements:

  • Ice cubes
  • Fresh mint
  • 1 splash Elderflower concentrate
  • 3 parts Italian Prosecco or any brut sparkling wine (non-sweet)
  • 1 wedge of lemon or lime, squeezed
  • 2 ribbons of cucumber

The Espresso Martini cocktail

The Espresso Martini is a sumptuous mix of vodka, coffee liquor and espresso that gets people giggling with excitement at its mere mention, here is a recipe inspired by Dirty Martini.

The method:

  • Fill a cocktail shaker with ice
  • pour in the espresso, vodka and Kahlua
  • Shake until chilled
  • Pour into two chilled glasses
  • Garnish with a few coffee beans

 

The measurements:

  • 2 shots (about 1.5 ounces each) espresso*
  • 2 ounces vodka
  • 3 ounces Kahlua
  • coffee beans for garnish
